Welcome to 2018! It's a new year and for some that means new goals, new resolutions and new healthy habits. This recipe is healthy, yet full of flavor, has a similar taste and texture to pasta and is so easy to make! Spaghetti squash has only about 20 calories per serving, is rich in protein and has far fewer carbs than pasta. It is rich in B vitamins, riboflavin, niacin, and thiamin, which promotes optimal cellular function. This recipe is a perfect side dish or a yummy breakfast hash. I make it often and keep it in the fridge for anytime!
Bacon Ranch Spaghetti Squash
1 Spaghetti squash
2 Tbs. olive oil, divided
3 Cloves garlic, minced
2 Cups collard greens, chopped (can use spinach or kale)
1 Tbs. Ghee
1 Tbs. The Healing Table Seasoning (see under the "Recipes" tab)
3 Slices cooked bacon, crumbled
Preheat oven to 425°. Cut squash in half and clean out seeds. Brush with olive oil and place flesh side down on baking sheet. Bake for approximately 30-40 minutes or until soft. Let cool and then scrape inside of squash and set aside.
Heat 1 Tbs. olive oil in a pan. Sauté garlic for 3 minutes. Add greens and continue cooking for 5-7 minutes or until wilted. Add ghee, seasoning and spaghetti squash and continue cooking for 3-5 minutes. Add crumbled bacon and toss. Serve warm in squash shell or baking dish. Garnish with fresh herbs, optional. You can also sprinkle with fresh parmesan cheese for added flavor.
