Apple Cinnamon Energy Bites

I am always looking for a healthy, clean yet tasty snack, especially before or after a workout.  I used to always rely on store bought protein bars and while those are a great option, no matter what brand I chose, they always had an ingredient that either didn't agree with me or didn't give me the right combination of protein and carbs.  Since going AIP/Paleo, I have a hard time getting enough carbs which is essential for energy.  My body doesn't tolerate grain and a ton of fruits aggravate my stomach so I decided I'd have to make my own snacks to fit my body's needs.  I have made several protein bars and energy bites from other sites and have really enjoyed them, but I wanted to come up with my own and started experimenting.  


Apple is one of the few fruits (in small quantities) that my stomach can handle so it seemed the perfect ingredient.  I love dates and they make the balls stick together perfectly.  Cinnamon is wonderful for anti-inflammation, a metabolism booster and tastes awesome.  As for the nut butter, I use tiger-nut because I'm on the AIP (Autoimmune Protocol) but you can use almond butter or the nut butter of your choice.  You get a great deal of protein from the nutter butter as well as the collagen protein powder which is a bonus.  I double the recipe often and freeze half of them and eat them just about every day.  I hope you enjoy!!!


Cinnamon Apple Energy Bites

  • 6 dates, pitted and halved

  • 1 Tbs. coconut oil

  • 1 Tbs. Tiger-nut butter (if AIP) or Almond Butter

  • 1 Tsp. Cinnamon

  • 3 Tbs. Collagen protein powder

  • ½ Cup Baked Apple chips

Combine all ingredients in a food processor or Vitamix until thoroughly blended into dough consistency.  Roll dough into bite size balls and place on baking sheet lined with parchment paper.  Freeze for 20 minutes.  Store in refrigerator.   You can double the recipe and freeze a batch.
