Maple Balsamic Roasted Broccoli

I love broccoli but in years past, I have always steamed it with a little sea salt and lemon juice.  While that way is super easy and yummy, my love for roasted veggies led me to try something new.   I read about roasting broccoli and gave it a try since roasted veggies are my favorite!  I love the slight crispy texture but I wanted to add some extra flavor so I created this maple/balsamic glaze to drizzle on top and I feel it really adds some zing.  You can use the same recipe with broccolini which is a family favorite of ours.   This is a perfect side dish for steak or roasted chicken.  I hope you enjoy!!

 

Maple Balsamic Roasted Broccoli

  • 2 Heads of Broccoli, chopped

  • 2 Tbs. plus 1 tsp.  Olive Oil, divided

  • 1 Garlic clove, minced

  • 2 Tbs. Balsamic vinegar

  • 1 Tbs. Maple Syrup

Preheat oven to 425°.  Toss broccoli with 2 Tbs. of olive oil and spread evenly on baking sheet.  Roast in oven for approx. 20 minutes or until desired consistency. 

While broccoli is roasting, heat 1 tsp. of olive oil in a small saucepan.  Add garlic and sauté 2 minutes.  Add balsamic vinegar and maple syrup.  Bring to a simmer for 2 minutes and then remove from heat and allow to thicken.  Drizzle over roasted broccoli and serve immediately.

Serves 4.
