Paleo Chocolate Chip Banana Muffins

When I first went AIP/Paleo almost a year ago, I gave up all sugar and thought I would give up treats forever.  I had no idea of the alternatives for "treats" that are out there, found so many recipes from Pinterest and various websites and soon came to realize that "treats" don't have to be derived from artificial sugars.  I learned to use fruit and natural ingredients to come up with "treats" that can fit my dietary needs and intolerances.  Gluten, dairy, and soy free chocolate has been a recent reintroduction that works for me on occasion and it has helped my sweet tooth.  These muffins contain clean ingredients and give the perfect amount of natural sugar that can satisfy most "sweet tooths".  I hope it satisfies you!


Paleo Chocolate Chip Banana Muffins

  • 3 Bananas, mashed

  • ½ Cup shortening, softened (I use Nutiva brand)

  • ¾ Cup Coconut flour

  • 1 tsp. Cinnamon

  • 1 tsp. Vanilla extract

  • 1 tsp. Baking soda

  • Pinch of salt

  • 3 Eggs

  • ½ Cup Enjoy Life mini chocolate chips

Preheat oven to 350°.  Line muffin pan with baking cups.  Combine mashed bananas and shortening in a bowl and use a mixer to combine.  Add in flour, cinnamon, vanilla extract, baking soda and salt and continue mixing until combined.  Add in eggs and blend a few more seconds until batter is fluffy.  Fold chocolate chips in batter.

Scoop mixture into baking cups filling about 2/3 full.  Bake at 350 for 30 minutes or until toothpick comes out clean.  Let cool completely before serving.  Store in fridge. 

Makes 12 muffins.
