I love sushi but when I went on the AIP diet, I had to give up soy sauce, even the gluten free version. Thankfully, I discovered Coconut Aminos which is the perfect substitute and I didn't have to compromise flavor. I love to add avocado and sometimes cucumber with my sushi since I can't have rice so I began playing around and came up with this really easy recipe. These tuna bites are so light and have such a fresh flavor so I have to stop myself from eating them all! The fresh ginger adds some zing and really finishes the flavor. I love the poke served on cucumber but if you're not a fan of cucumber (my kids don't care for it), you could serve it on tarro chips, white rice or even tortilla chips.
Also, you can use any blend of seeds you want but I highly recommend Trader Joe's "Everything But The Bagel" seasoning. It is soooo good and you can put it on anything!
Tuna Poke Cucumber Bites
6 oz. Ahi Tuna, thinly sliced into small pieces
2 Tbs. Scallions, chopped
½ tsp. Fresh ginger, grated
1 Avocado, cubed
2 Tbs. Coconut Aminos
Juice of half a lime
1 Cucumber, sliced
1 Tbs. Assorted sesame seeds or Trader Joe’s “Everything But the Bagel” Seasoning
Mix tuna, scallions, ginger, coconut aminos, and lime juice in a small bowl and chill in refrigerator for 20 minutes. Spoon the tuna mixture on top of each cucumber slice and sprinkle with sesame seeds. Serve immediately.
Makes approx. 20 bites.
