Pepperoni Pizza Bites

Who doesn't love pizza??  Well, maybe not everyone but our family certainly does.  I have been making pizza bites since my kids were little with regular flour but switched to gluten free flour quite a few years years ago and the kids loved them.  I hadn't made them in years (I simply forgot about them) but wanted to make a grain free/paleo snack for my kids lunches and remembered how much they like the pizza bites.  I started out trying to find the right mixture of flours but then remembered Simple Mills Pizza Dough...the answer to all my prayers!  I used the dough with the same ingredients I've always used and came up with these yummy bites.  They are so easy to make and full of yummy pizza flavor.  The Simple Mills mix is really clean and I used pizza sauce and pepperoni from Trader Joe's/ Whole Foods that had relatively safe ingredients.  I urge you to read the labels on whatever brands you use to make sure they are "clean".  These bites are perfect for a SUPER BOWL party, after school snacks, in lunches and can also be frozen in batches for later use.  I hope you and your family enjoy!


Pepperoni Pizza Bites, Paleo

  • Simple Mills Pizza Dough Mix

  • 2 Tbs. Apple Cider Vinegar

  • 2 Tbs. Olive Oil

  • 1/3 Cup Pizza Sauce

  • 1 tsp. Parsley

  • 1 Cup Pepperoni, diced

  • 4 Tbs. Water

Preheat oven to 350°.  Combine the contents of the mix with the remaining ingredients and stir until thoroughly combined.  Roll the dough into bite size balls and place on a baking sheet lined with parchment paper.  If the dough gets too sticky to work with, wet your fingers.  Bake for 15-18 minutes until lightly browned.  Serve immediately with pizza or marinara sauce.

Makes 20-24 balls depending on size.
