Paleo Protein Bars

We go through a lot of protein bars in our house.  Between my husband, son and daughter, someone is always grabbing a bar to go and, of course, they all like different brands.  I began making my own protein bars about a year ago because the pre-packaged ones all seem to have ingredients I can't tolerate.  I've shared my Cherry Chocolate Protein Bars on my blog and while I love them, my husband likes bars with nuts to tide him over between meals so I decided to make a bar for him.  I came up with these bars after playing with various ingredients and I think the combination of flavors are yummy.  My husband loves them so I keep batches of them in the freezer for whenever he needs them.  The coffee granules give them a different flavor but if you don't care for coffee, take it out and you'll still have a great tasting bar.  You can also substitute whatever dried fruit fits your tastes.  These are perfect to individually wrap and keep in the fridge for a quick snack or to pack in kids' lunches.  I hope you enjoy!

 

Paleo Protein Bars

  • ¼ cup Coconut butter, softened

  • ½ cup Almond butter

  • 2 tablespoons Black strap molasses

  • 1 teaspoon Honey

  • Pinch Sea salt

  • ½ cup roasted and unsalted almonds, finely chopped in a food processor

  • 1 teaspoon Natural vanilla extract

  • 1 tablespoon Instant coffee granules, optional

  • 1 teaspoon Cinnamon

  • ¼ cup Collagen Peptides Protein Powder

  • ¼ cup Dried cranberries

  • ½ cup Apple chips, crumbled into small pieces or chopped in a food processor

Grease an 8x8” pan with coconut oil (or use silicon baking mold).  In a large mixing bowl, combine coconut butter, almond butter, molasses, honey and salt and mix well.  Add almonds, vanilla, coffee granules, cinnamon, protein powder and combine well.  Add cranberries and apple chips and mix well.  Press into pan and set in freezer for 30 minutes.  Cut into bars and store in refrigerator.

Makes 9 bars.
