I have been making a kid-friendly version of these broccoli bites since my kids were really little. I found it to be one of the easiest and tastiest ways to get my kids to eat vegetables without them really knowing it (one of my many Mom tricks). The version I made didn't have bacon but included cheese and my kids would gobble them up! In the last few years, I've tried cut back on the amount of dairy my kids eat because it tends to bother their stomachs so I wanted to re-create my old recipe to fit their dietary needs. I took out the cheese and added bacon for extra flavor and a boost of protein and when my kids tried them, I got the "thumbs up". If dairy is not an issue for your family, then you can add some shredded cheese if you choose and might make them more appealing to small children. These bites freeze really well so I make them in big batches and freeze them so they are an easy veggie option for dinner or lunches. Enjoy!
Broccoli Bacon Bites, Paleo
2 Large broccoli heads, steamed and mashed (approx. 2 cups)
5 slices cooked bacon, crumbled
2 tablespoons Ghee, melted
1/3 cup Coconut Flour (Can use almond flour)
2 teaspoon Onion Powder
2 teaspoon Garlic Powder
2 teaspoon Parsley
1 teaspoon Sea salt
Preheat oven to 375°. Combine all ingredients and mix thoroughly. Roll mixture into bite size balls and place on a parchment paper or silpat lined baking sheet. Bake for 25 minutes, turning after the first 15 minutes. Serve immediately.
Makes Approx. 18 bites
