Here's another awesome protein bar! I love that this bar has clean ingredients and is so easy to make. It has a really mild flavor but just enough berry flavor to add a sweet taste. If blueberry isn't your favorite, substitute whatever dried fruit is your favorite. These protein bars are completely void of processed ingredients and can be frozen for later use. As I've said in previous posts about protein bars, if you plan to make your own protein bars on a regular basis, I highly recommend buying a silicone mold like this one here.
You could also make individual bite size balls if that's your preference. I hope you enjoy!
Vanilla Blueberry Bars
¼ cup Coconut flour
½ cup Vanilla protein powder (I use Primal Kitchen)
¼ cup Dried blueberries
¼ cup Coconut butter
3 tablespoons Coconut oil, melted
1 teaspoon Cinnamon
2 tablespoons Maple syrup
½ teaspoon Sea salt
Optional: shredded coconut
Combine all ingredients in a medium bowl and stir until thoroughly combined (the mixture might be slightly chunky). Press into a greased 8"x 8" cake pan or a bar silicon mold and flatten evenly. Place in the refrigerator for 30 minutes and cut into bars and serve. Store in fridge.
Makes 8 bars.
