Vanilla Matcha Protein Bites, Paleo/AIP

I posted this recipe on Instagram a few months ago but I make it all the time to have as a ready-to-go snack so I wanted to post it here for all of you. 


Have you ever used Matcha?  I hadn't until about a year ago. 


Matcha is a finely ground powder of specially grown and processed tea leaves.  Because it's made from high-quality tea, and the whole leaves are ingested, it's a more potent source of nutrients than steeped green tea.  In addition to providing small amounts of vitamins and minerals, match is rich in antioxidants.  It's also an excellent source of caffeine (about the same caffeine content as coffee) so it's a great substitute for anyone avoiding coffee. 


I use Vital Proteins Matcha Collagen Powder for this recipe but you can use any matcha powder you prefer.  These bites take minutes to put together and can be made into bars as well.  I keep a container of them in the fridge for an afternoon boost of energy!


Vanilla Matcha Protein Bites

  • ¾ Cup Coconut butter, softened

  • 1 tablespoons Coconut oil

  • 2 tablespoons Coconut flour

  • 1 tablespoons Honey

  • 2 tablespoons Vital Proteins Matcha Collagen (or any matcha powder)

  • 2 tablespoons Vanilla protein powder (I use Primal Kitchen) 

Combine ingredients in a food processor until smooth consistency.  Roll into bite size balls and place on parchment lined baking sheet.  Place in refrigerator for 30 minutes.  Eat immediately or store in fridge. 
Make approx. 8 bite size balls. 

*You can also make them into bars.
