Spinach Prosciutto Muffins

I guess you could say I have a slight obsession with Simple Mills mixes...they are so good and easy to work with.  A few weeks ago, I used the SM Pizza Dough mix to make my Pepperoni Pizza Bites and they have been a hit!  See the link here...

My daughter and I had the idea to use the Artisan Bread mix, add spinach, pesto, and prosciutto to see how it tasted...the result was awesome and the pesto gives a little boost of flavor!  I used a non-dairy pesto but you can use whatever kind you prefer.  These muffins are so easy, packed with veggies and are the perfect party snack.  They can also be frozen and pulled out for a quick lunch.  I hope you enjoy!


Spinach Prosciutto Muffins

  • 1 Box Simple Mills Artisan Bread Mix

  • 2 tablespoons Olive Oil

  • ¼ cup Apple Cider Vinegar

  • ¼ cup Water

  • ¼ cup Pesto

  • 2 Eggs

  • ½ cup Spinach, finely chopped

  • ½ cup Prosciutto, finely chopped

  • 1 teaspoon Garlic powder

Preheat oven to 350°.  Place all ingredients in a medium bowl and stir until thoroughly combined.  Scoop mixture into greased muffin tins and bake for 25-30 minutes or until tops are slightly browned.  Serve warm.

Makes 12 muffins.
