Spring has finally sprung!! That means Easter is around the corner...chocolate bunnies, deviled eggs and all flavorful treats. I try not to have a lot of tempting candy and treats with artificial dyes for my kids so when I can give them a clean, tasty treat, I feel better about what they are indulging in. I love the taste of lemon and anything tangy so these bars have been a favorite of mine.
It took a few tries to find the right combination of paleo-compliant flours to make the right crust and I added the dates to give an extra taste of sweetness and help keep the crust from crumbling. As for the filling, the amount of lemon juice can be changed depending on how "lemony" you want them to be. I was conservative so feel free to add more.
These bars have a light, tangy flavor so they aren't too rich. These are a perfect snack or after-dinner treat for any time of year and are the perfect "clean" dessert to take to any gathering. Why not show others how yummy clean eating can be??? Happy snacking!
Paleo Lemon Bars
Preheat oven to 350. Use ghee to grease an 8x8 baking pan.
Combine all ingredients in food processor or Vitamix and blend until thoroughly blended. Press into baking pan until flat and bake for 15 minutes. Allow to cool for 10-15 minutes.
Crack eggs into a medium bowl and whisk until thoroughly beaten. Add remaining ingredients and continue to whisk until thoroughly mixed. Pour filling over crust. Bake for 23-25 minutes or until edges are slightly browned. Allow to cool for an hour and chill for an additional hour before cutting into bars. Store in refrigerator.
Makes 9 bars.
