I've said it before...mornings around our house are hectic. I like to plan ahead for breakfast so no one is without food when rushing out the door. I do a lot of batch cooking and these Vanilla Protein Pancakes are one thing I make every week. My husband and son love them and I like knowing they are getting a great balance of protein, carbohydrates, and healthy fats first thing which sets the right tone for the day. I use Birch Benders Paleo Pancake Mix for these pancakes because I love the ingredients and the flavor but you can substitute whatever mix works for you.
Vanilla Protein Pancakes, Paleo
2 cups Birch Benders Paleo Pancake Mix
1 ¾ cups water
½ cup Vanilla yogurt (I use Siggis)
¼ cup Vanilla protein powder
Combine all ingredients in a bowl and whisk until thoroughly blended. Pour batter onto hot griddle or skillet and cook until done.
Add whatever toppings you desire.
Makes 10-12 pancakes depending on size.
