This is an awesome, extremely versatile sauce. I absolutely cannot stand mayonnaise and have never cooked with it but after going AIP/Paleo, I kept hearing about Primal Kitchen Mayo (an egg based mayo) and decided to give it a try. It definitely tastes like mayonnaise so I had to play with it to create a sauce that didn't have a "mayo" flavor. I love the lemon and garlic flavor in this sauce mixed with the creamy texture. It's perfect for dipping with chicken tenders or breaded shrimp, wonderful poured over baked chicken and veggies or as a dipping sauce for grilled artichokes. Lemon Garlic Aioli Sauce
½ Cup Primal Kitchen Avocado Oil Mayo (or your favorite brand)
1 tablespoon Lemon Juice
1 teaspoon Lemon zest
1 Garlic cloves, minced
1 tablespoon Olive Oil
Sea salt and pepper to taste
Combine all ingredients in a large measuring cup. Use an immersion blender to thoroughly mix until a smooth consistency. Keep refrigerated.
Makes 6 ounces.
