
Are mornings hectic for you? I know they are for me. I'm so not a morning person...I love to sleep and take it easy when I wake up. Unfortunately, with two busy kids, I have to wake up early to make sure everyone has what they need to get out the door on time. I like to get every minute of sleep I can so I make breakfast for my family the night before. Usually I do eggs and protein pancakes but I like to change it up when I can. I threw together these Spinach and Sausage Egg Cups and my kids now request them all the time. You can easily change the spinach to another vegetable that appeals to your family. Enjoy!!
Spinach and Sausage Egg Cups, Paleo
8 oz. ground breakfast sausage
12 eggs
3/4 cup Spinach, finely chopped
1 teaspoon Garlic powder
1 teaspoon Onion powder
1 teaspoon Parsley
Pepper to taste
Preheat oven to 400°. Grease a muffin tin with olive oil or line with baking cups. Cook sausage in a heated skillet and set aside. Break eggs into a large bowl and use whisk to beat eggs making sure to break every yolk. Add sausage and remaining ingredients and stir until thoroughly combined. Evenly pour mixture to fill 12 cups. Bake for 8-10 minutes or until eggs are fully cooked. Serve warm.
