
I put a new spin on my Vanilla Blueberry Bars just in time for warm summer. I love the tangy flavor of lemon so I created these bars with that in mind. For the silicon mold, see my Vanilla Blueberry Bar recipe for the link. Hope you enjoy!!
Lemon Cranberry Protein Bars
¼ Cup Coconut flour
½ cup Collagen protein powder
¼ cup Cranberries
¼ cup Coconut butter
3 tbs. Coconut oil, melted
1 tsp. Cinnamon
2 tbs. Maple syrup
Juice of ½ lemon
Zest of ½ lemon
Combine all ingredients in a medium bowl and stir until thoroughly combined (the mixture might be slightly chunky). Press into a greased 8"x 8" cake pan or a bar silicon mold and flatten evenly. Place in the refrigerator for 30 minutes and cut into bars and serve. Store in fridge.
