Tropical Toasted Coconut Granola, AIP/Paleo

I have been craving granola yesterday and although I love Within Without Grain-Free Granola, I have been trying to reduce the amount of nuts I eat due to inflammation so I created a new flavor of granola that is completely AIP/Paleo compliant.  With the warm weather finally here, I love the fresh, tropical flavor of apple, mango, and goji berries.  You can use whatever combination of dried fruit you like but I buy this mix from Costco (you can also click on the picture for the link to Amazon) because it's a great blend, already chopped and ready to go.  This granola has super clean ingredients and also has an added bonus of protein from the collagen powder but you can also leave that out if you don't have it.


This granola is perfect to use as a topping for yogurt, mixed with milk for breakfast or as a snack by itself.  I keep small jars of it handy for a grab-and-go snack.  I hope you get creative with the fruit flavors and tag me on Instagram or Facebook with pics of your creations!  Happy Snacking!



Tropical Toasted Coconut Granola, AIP/Paleo

  • ¾ cup Coconut chips

  • 2 cups Shredded coconut

  • 1 cup Assorted dried fruit, chopped

  • ¼ cup Collagen protein powder

  • 1 teaspoon Cinnamon

  • 1 teaspoon Ginger

  • ½ teaspoon Sea Salt

  • 3 tablespoons Maple Syrup

  • 2 tablespoons Coconut Oil, melted

Preheat oven to 300°.  Combine all coconut chips, shredded coconut, fruit and protein powder in a medium bowl.  In a separate bowl, whisk together cinnamon, ginger, sea salt, maple syrup and coconut oil.  Add liquid to granola mix and stir thoroughly.  Spread mixture evenly on a parchment paper or silpat mat lined baking sheet.  Bake for 15 minutes, turning after first 7 minutes.  Remove from oven when shredded coconut is slightly browned.  Let cool before eating. 

Store in glass container in fridge.  Can be frozen.
