Cacao Coconut Granola, Paleo

Granola has become one of my favorite snacks and I have a few brands I enjoy but nothing compares to making my own.  I love throwing together whatever ingredients I have on hand and playing with different flavors.  Cacao nibs have become a favorite sweet treat of mine so I threw some into this batch of granola and it's become my preferred snack! You can sprinkle this granola on yogurt, oatmeal or eat it by itself.  It's the perfect "clean" treat!

 

Cacao Coconut Granola, Paleo

  • 1 cup Coconut chips

  • 2 cups Shredded coconut

  • ½ cup Roasted & unsalted almonds, chopped

  • ¼ cup Collagen protein powder

  • 2 teaspoons Cinnamon

  • ½ teaspoon Sea salt

  • 3 tablespoons Maple syrup

  • 2 tablespoons Coconut oil, melted

  • ½ cup Cacao nibs

Preheat oven to 300°.  Combine coconut chips, shredded coconut, almonds, protein powder, cinnamon and salt in a medium bowl.  In a separate bowl, whisk together maple syrup and coconut oil.  Add liquid to granola mix and stir.  Add cacao nibs and continue to stir until thoroughly combined.  Spread mixture evenly on a parchment paper lined baking sheet.  Bake for 15 minutes, turning after first 7 minutes.  Remove from oven when shredded coconut is slightly browned.  Let cool before eating. 

 

*Optional* Add 1 teaspoon Orange zest for a tangy flavor.

 

Store in glass container in fridge.  Can be frozen.
