
It's no secret we eat a ton of salmon in our house...it has amazing health benefits! I like to switch things up often and these salmon cakes came to mind.
I grew up eating "salmon patties" all the time. My mom made them quite often and we loved them. I used the basic ingredients my mom used but a little healthier and subbed leeks for onion to add a slightly sweet flavor. They have a great taste and can be eaten by themselves or with you can use any dipping sauce if you prefer. We pair these salmon cakes with a side of veggies, salad or pasta and my kids also love them in their lunches. Enjoy!
Salmon Cakes, Paleo
2 7.5 ounce cans wild-caught Salmon, (drained and bones removed)
1 Garlic clove, minced
1 medium Leek, finely diced
2 tablespoons Almond flour
1 egg
½ teaspoon Parsley
½ teaspoon Dill
½ teaspoon Oregano
Salt and Pepper to taste
2 tablespoons Coconut oil
Combine all ingredients (except coconut oil) in a medium bowl and stir until thoroughly mixed. Heat a large skillet and melt coconut oil. Form salmon mixture into patties and place in skillet. Cook cakes for 5-7 minutes on each side or until browned and a slightly crisp crust. Serve immediately.
Makes 6 cakes.
